Social Distancing: Days 21 - 23

Day 21 (Wednesday): Sometimes when my sister and I take a walk around the neighborhood we pass by this Indian restaurant. It always makes me want Indian food. I figured we could make chicken tikka masala since I bought this family pack of chicken breast.

What I didn't realize was the fact that we've been eating so much that we're really cutting it close on having enough for this recipe. But we just make it work. I also didn't realize how low we were on tomato paste. Whatever, we'll just omit that. And the chicken stock.

We also made creamed spinach, and my sister made some naan. We were a little worried since we didn't have any more yogurt and we barely had enough yeast. But it didn't matter! It was all delicious.


Day 22 (Thursday): I haven't had a noodle dish during the quarantine yet, and I have some vermicelli noodles left over from the spring rolls, so I decide to make Singapore noodles.

This recipe called for tofu, but I didn't have any, since I didn't plan to make this meal in advance. But I did have some shrimp so I threw that in instead. I actually think having the crispy tofu would have been nice. It wasn't bad, but I think it could have used a little more flavor.

Also, we're officially out of garlic now. We almost went grocery shopping today. But we stopped ourselves! We can last a whole week! I know it!


Day 23 (Friday): Our supply is seriously dwindling. But we have enough for my sister to make some Nikujaga (Japanese beef stew).

This is one of the dishes she made when she studied Japanese cuisine in school. It seemed easy enough for me to make it, though! And it was delicious.

At this point we're also out of soy sauce. Though I guess we still have some soy sauce alternatives. We're determined to last at least another day without shopping. Can we do it? Tune in to find out...


Social Distancing: Days 18 - 20

Day 18 (Sunday): We decide to go on a trek to the Asian store. And it was stressful. The line for checking out was very, very long. I don't think I should ever come back on a Sunday. Because of how exhausting that was, we grab takeout for lunch.

And for dinner, we rolled some sushi!

My sister wrapped this one. Mine was not as nice.


Day 19 (Monday): I need to do something with the green beans since they're starting to look kind of sad. I bought a huge slab of salmon in a previous grocery trip, so I figured we'd do this simple salmon and green beans dish. My sister even de-scaled the salmon.

Slightly fancy and very delicious.


Day 20 (Tuesday): Somehow we're already at the point where we need to get creative again with our meals. We really do have a lot of ingredients, but I'm not quite sure how to put them all together. I look at the top of my white board. Corn Tortillas. I have no idea how long that pack of tortillas has been sitting in my fridge. At least several months. I must use them.

The first thing that comes to mind is enchiladas. (I know, you would think it's tacos, but I like to mix things up!) Looking through enchilada recipes, I can't quite find one that contains only ingredients I have. But this Skinnytaste recipe comes decently close. Except that I don't have the right ingredients for the sauce, so I consult Budget Bytes for that.

Yeah, we struggled to get the enchilada rolls out nicely.

We make it work with what we have. Half a can of diced tomatoes with chiles, shredded chicken, some onions, and a bunch of spices. It tastes great.


Social Distancing: Days 15 - 17

Day 15 (Thursday): Beef and broccoli. I'm using a recipe from The Omnivore's Cookbook which I've never really used before. This beef and broccoli was good, and reminded me of my family's cooking. Though it didn't really taste like takeout. It probably needed more sugar and I wanted the sauce to be thicker. Next time I'll try a different recipe.

Day 16 (Friday): Thursday night, I'm staring at the whiteboard for a good 15 minutes trying to think of what would make the most sense to make. I have lots of lettuce. Romaine lettuce, green leaf lettuce, iceberg lettuce. I can use the romaine and iceberg for salad. But what about the green leaf? I know what would work: lettuce wraps!

So I'm scrolling through lots of lettuce wrap recipes, and I settle on a peanut sauce one since I have peanut butter and no other use for it. I had to modify the recipe a lot though since I didn't have all the ingredients it called for. But I will not go to the grocery store if I don't have to! I used chicken breast instead of ground chicken and just cut it into small pieces before stir frying. The recipe called for 1/4 cup hoisin sauce and I think I used a single tablespoon. (It was a good call) I also added some sliced bell pepper and nuts that I picked out of a bag of trail mix.

Maybe more like lettuce boats than lettuce wraps.


Day 17 (Saturday): It's the weekend again! But who can really tell when we're inside all the time? My sister decided to use up the rest of the apples for some apple coffee cake. And it's like The Woks of Life just knew that's what she wanted to make because they just recently posted a recipe for this.

This was pretty good, but the apples were way too sweet. Not like we had a choice in what apples we could use though. This would probably work better with something like a Granny Smith apple.

As for dinner, I still had more stir-fry dishes I wanted make. One of my favorite stir-fries is ginger chicken, which my mom makes really well. I'm not very good at cooking like my mom does, so I looked up a recipe.

Obviously, this isn't like my mom's ginger chicken, but it was still pretty tasty.


Social Distancing: Days 12 - 14

Day 12(Monday): We still have a decent amount of Thai basil leftover, and I figured it's due time for some stir fry. Plus I don't think it's going to last another day. I'm scrolling through recipes from The Woks of Life and I come across one that looks good. It also looks familiar. I made it last year! So I check my old posts, and it says to double the amount of basil. Well, that's not happening. Doesn't matter. This was still delicious.

We also realize that even though we bought a ridiculous amount of groceries the week before, that we were running out of fruit! So we go back to the grocery store an pick up more stuff. Hey, we lasted one extra day this time!


Day 13 (Tuesday): I have a friend of a friend that apparently works at a local restaurant, and they've got a ton of food (ingredients) that they're telling their employees to take home. So what does that mean for me? I get a surprise box of produce! It's like Misfits Markets again!

I mean, really all I specifically asked for was avocados, but she asked me if I was also willing to take limes, and so I said, I'll take anything! But these avocados are super ripe, so they need to be used today.

And what else can we do with avocado? Put them on some BBQ chicken pizza!

We half the dough recipe this time since we had super thick pizza two days ago. But this turns out super thin. Next time we'll go with 3/4 the amount of dough. And maybe one day I'll actually buy a circular pizza pan so we can have proper circular pizzas.


Day 14 (Wednesday): Yesterday we had chips and guac. Today we decide to have chips and queso!

But what about dinner? We have so much food. Why did we buy so much food? What do we have that looks like it's going bad? The green beans are looking a little sad. Let's make green bean casserole! I have this can of Cream of Chicken that has been sitting in my cabinet for who knows how long. It looks like it expired last year. But it's canned, so I assume it's fine.

In making the pizza and the cheesy bread a few nights ago, my sister learned that I have a large amount of cornmeal just sitting in my pantry, so this inspires her to make some cornbread.

Now all we need is some protein in this meal. I did buy a family pack of chicken breast from the store on Monday. So I look for some chicken breast recipes, and found this super basic one from Budget Bytes. Chicken breast is kind of boring, but as long as we absolutely do not overcook it, it will be delicious. The recipe says to cook for 20 minutes. I think we cooked it for less than 15. Perfectly cooked chicken breast.

Social Distancing: Days 10 - 11

Day 10 (Saturday): It's the weekend! My sister is losing track of the days as every day feels the same. But since I don't have work, I decide that it would be a good time to make dumplings since it takes me a while to make dumplings.

Of course I didn't think about the fact that my sister is an amazing and super fast dumpling wrapper. She probably wraps four dumplings in the time it takes me to wrap one.

She actually wasn't as happy with this batch as she usually is. I think we need a larger meat to veggies ratio. But I still thought it was delicious. So delicious, that we forgot to take a picture immediately and didn't remember to do so until we ate half of them.

Not only does my sister make the best dumplings, but she also makes the best dipping sauce!


Day 11 (Sunday): In keeping with the theme of making more elaborate meals on the weekend, we decided to make pizza. From scratch. That's right: homemade pizza dough and homemade pizza sauce. I used half a can of crushed tomatoes in our soupy pasta on Friday, so I turned the other half into pizza sauce. It was really easy!

My favorite pizza is BBQ chicken, but if I want a more traditional cheese and tomato sauce pizza, my favorite topping is tomato. I love tomatoes on pizza.

Not only that, we also made cheesy bread! I used to eat cheesy bread all the time when my work would order pizza from a place called Giovanni's which made the most amazing cheesy bread. Unfortunately, one time they were super late with their delivery so the admin team decided to never order from there again ):

But, who cares! I can make my own cheesy bread! Well. My sister can. Dough still kind of scares me.

It was kind of awkward making both since the pizza needed to cook at 425 and the cheesy bread needed to cook at 375 but we made it work. We actually have a decent amount of pizza sauce left! Maybe we'll make more cheesy bread later?
